Pumpkin Oatmeal? Yes, please!

Have I ever mentioned that I suck at making steel-cut oats?! I have failed on making it countless amounts of times. I can't even begin to explain in how many ways, I have ruined the "supposed" tasty breakfast.
A few weeks ago, I went to Starbucks and tried their steel-cut oats for the first time. I was impressed. It was actually delicious.
After eating up every last oat, I told myself I need to make another valiant effort at cooking the healthful breakfast. Thankfully, I had exactly 1-cup of steel cut oats left at home. But I needed a plan. I did what I do best and started researching.
It wasn't long before I stumbled upon this amazing recipe Crock Pot Pumpkin Pie Steel Cut Oats by Sugar-Free Mom. It calls for pumpkin.You can never go wrong with pumpkin, right?! I had most of the ingredients. I just needed to go to Publix for the can of pumpkin.
I pulled out my crock pot. And started loading it up with all the ingredients. It took me all of 10 minutes to prep everything.

I set the crock pot on low for 8-hours and off to bed I went.

The oatmeal overcooked a tad. I assume because my crock pot goes on warm after.

It was nothing a little scooping up and stirring couldn't fix.

I added my own little twist to the recipe and added walnuts.
I ended up using agave to sweeten my oatmeal. It ended up officially being the first time I made an edible version of oatmeal. Previously, I was getting the flavoring wrong. The pumpkin added that extra flavoring that I love so much. It tasted like pumpkin pie. It was perfect! Next time, I might try to only cook it for 7-hours. The 8, I think, over did it on my crock pot.

Now I am hooked and need to make another pot. :)

I need more ideas. :) How do you cook your steel cut oats?
